Recipe: Oh So Berry Sorbet

A fresh delicious dessert for under 100 calories that’s jam packed with antioxidants! This light sorbet has the creamiest texture and is full of natural fruits that add a ton of flavor. This sweet, and refreshing sorbet is easily prepared in only a few minutes. You do need about 2 hours for it to freeze, but your guests will be so impressed with this bright and tasty sorbet!

    Total Time: 75 minutes

    Ingredients

    • 1 cup blueberries
    • 1 cup strawberries
    • 1/2 cup pomegranate juice
    • 2 tablespoons lemon juice
    • 1/4 cup sugar
    • 1/8 teaspoon salt

    Directions

    1. Place all ingredients in the bowl of a food processor or blender
    2. Process until entirely smooth, about 2 minutes
    3. Pour through a fine mesh strainer held over a freezer safe container to catch any chunks of fruit that the processor left behind. (This step ensures a smooth consistency, but is entirely optional)
    4. Cover and freeze for at least 2 hours before serving. Let sit at room temperature for 5 minutes before serving for best consistency

    *A few additional berries and a small amount of lemon zest from the lemon peel are a nice garnish
