Strawberry Spinach Salad with ChickenThis Strawberry Spinach Salads is one of my Summer favorites, but I make it all year long. The spinach is high in iron, and my yogurt dressing is delicious!1 (9 oz) Package of fresh spinach leaves1 1/2 cups strawberries, sliced1/4 cup nonfat plain greek yogurt1 tablespoon lemon juice1 tablespoon light agave nectar (may use honey)1 tablespoon poppy seeds1 tablespoon canola oilsalt to taste2 tablespoons chopped pecans
This Strawberry Salad Topped with Pecans and a creamy poppy seed dressing is fresh and delicious! Spinach salad tossed with fresh strawberries, diced chicken, and pecans. The dressing has a nice tartness to offset the sweet strawberries. Strawberries are filled with potent antioxidants that are proven to protect the body’s cells from free radical damage. Protecting your heart, and possibly preventing cancers. This is the perfect dish for a Summer lunch or light dinner. The chicken and spinach provide a protein rich meal that will leave you satisfied.

Ingredients you will need:
1 (9 oz) Package of fresh spinach leaves
1 1/2 cups strawberries, sliced
1/4 cup nonfat plain greek yogurt
1 tablespoon lemon juice
1 tablespoon light agave nectar (may use honey)
1 tablespoon poppy seeds
1 tablespoon canola oil
salt to taste
2 tablespoons chopped pecans
1) Place the spinach leaves, strawberries, and diced chicken in a large serving bowl
2) In a seperate bowl, whisk together yogurt, lemon juice, agave nectar, poppy seeds, and canola oil to creat the dressing. Season with salt to taste
3) Drizzle dressing over the salad in the bowl and toss gently to fully dress.
