This baby kale salad is full of super tender kale, then topped with delicious pomegranate seeds and sweet and spicy pecans. It’s spicy-sweet and slightly sour and is a great, tasty way to get in some of your daily veggies. It’s healthy AND delicious!

Ingredients

  • For the Spicy Candied Pecans
  • 1 cup pecans
  • 2-4 tablespoon maple syrup
  • A pinch of sea salt, cracked pepper, and cayenne powder
  • Optional: 1/2 teaspoon butter
  • For the Salad Dressing
  • 3 tablespoon olive oil
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • A pinch of sea salt
  • For the Salad
  • 4 cups baby kale
  • Seeds from 1 pomegranate
  • Black pepper, to serve
