I am obsessed with squash! I love this butternut squash and quinoa salad with pomegranate recipe because not only is it delicious, but it’s nutrient packed as well. Plus, it makes a yummy lunch or side dish and will keep in the fridge for a few days.

  • 1 small butternut squash, peeled and cubed
  • 1 tbsp. olive oil
  • 2 tbsp. maple syrup, divided
  • 1 tbsp. curry powder
  • Salt and pepper
  • 1.5 cups cooked quinoa
  • 1/2 cup pomegranate seeds
  • 1/4 cup parsley, chopped
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. whole grain mustard
  • Salt and pepper
