Recipe: Carrot Noodles with Thai Peanut Sauce

Try this vegan Thai recipe using carrot noodles and a delicious coconut curry peanut sauce!


This recipe trades soba noodles for carrot noodles, which are cooked and then smothered in a delicious Thai peanut sauce. And because the sauce is dairy-free, you can use tofu instead of chicken to make this vegan-friendly if you so desire. What’s not to love?


  • For the tofu
  • 1 package medium-firm or firm tofu
  • Coconut oil
  • 1 tablespoon soy sauce
  • For the peanut sauce
  • 1 cup coconut milk (or ½ cup coconut milk and ½ cup water)
  • ¼ cup real peanut butter
  • 3 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • Juice of 1 lime, about 2 tablespoons
  • 1 - 1-inch piece ginger, finely grated
  • 2 large garlic cloves, finely minced
  • For the noodles
  • 1 teaspoon coconut oil
  • 1 medium red onion, thickly sliced1 red pepper, thickly sliced8 carrots, cut into noodles with a julienne peeler or spiralizer
  • 2 cups bean sprouts
  • ½ cup roughly chopped cilantro
  • A handful of peanuts, for garnish
