Recipe: Chickpea Curry with Cauliflower Rice

We love a good curry here at GHU—flavorful, healthy and full of spices! This particular curry recipe is vegan, gluten free, dairy free and uses chickpeas for added fiber and protein. Plus, this delicious weeknight recipe is super easy! Stir fry your veggies, add your spices and chickpeas, cook and you’ll have a satisfying meal ready in just 30 minutes. Oh, and we LOVE cauliflower rice: you’ve got to try it if you haven’t already!

Ingredients

  • Curry
  • 1 tablespoon coconut oil
  • 2 leeks, sliced
  • 1/2 red bell pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon ginger, freshly grated
  • 2 tablespoons red curry paste
  • 8 ounces light coconut milk
  • 1 1/2 cups cooked chickpeas (canned chickpeas that have been rinsed and drained are fine)
  • 3 tablespoons cilantro, chopped
  • Rice
  • 1 medium head cauliflower (about 1 1/2 pounds)
