Healthy Flourless Black Bean Avocado Brownies

Putting avocado into brownies may sound a little strange, but I promise this recipe will not disappoint. These brownies are made with black beans in place of flour and avocado instead of butter or oil.  That means these brownies have more fiber and healthy fats than regular brownies and they are gluten-free and vegan!  Everyone will love these chocolate packed brownies and no one will expect that they are actually healthy.

Ingredients

  • 1 large flax egg ( a flax egg is 1 tbsp flax mixed with 2.5 tbsp water let absorb for 5 minutes before using)
  • 1 – 15oz can low sodium black beans, rinsed and drained
  • 1/2 medium to large ripe avocado
  • 1 tablespoon vanilla
  • 1/2 cup dark brown sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/3 cup vegan chocolate chips, plus 2 tablespoons for sprinkling
  • 1 teaspoon coconut oil
