  • 2- 10 oz cans enchilada sauce
  • 1 pound boneless skinless Chicken Breasts
  • 2 medium sweet potatoes, cooked and diced
  • 2 teaspoons olive oil
  • 1/2 small red onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 cup chopped cilantro
  • 9 – 6 inch corn tortillas
  • 3/4 cup reduced fat shredded Mexican or colby jack cheese
  • 3/4 cup reduced fat shredded mozzarella

All of the recipes look absolutely delicious. I use Weber bbq sauce - no high fructose corn syrup, which most others contain.
