This Moroccan-inspired Spice Bliss bowl is jam packed with roasted vegetables, spices galore (including paprika, cumin, turmeric, ginger, cinnamon, and MORE), protein-packed & fiber-rich chickpeas, millet, and a cucumber tomato salad with lemon juice and mint. It channels the flavorful cuisines of Morocco and you’re sure to love it!

Ingredients

  • For the Bowl
  • Two handfuls of mache
  • 300 grams of cherry tomatoes
  • 1/2 cucumber
  • 1 bunch of fresh mint
  • 1/2 lemon, juiced
  • Pinch of sea salt
  • Pinch of black pepper
  • Beetroot hummus
  • 300 grams of cooked millet
  • For the Moroccan Spiced Roasted Vegetables
  • 1-2 tablespoons of extra-virgin olive oil
  • 1 sweet potato
  • 1 beetroot
  • 1 fennel
  • 1 yellow bell pepper
  • 1 red onion
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • Pinch of cardamom
  • Pinch of cayenne pepper
  • For the Moroccan Spiced Chickpeas
  • 1 can chickpeas
  • 1/4 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon coriander
  • 1/4 teaspoon turmeric
  • Pinch of cinnamon
  • Pinch of sea salt
  • Pinch of cayenne pepper
  • For the Orange Tahini Dressing
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1/2 orange, juiced
  • 2 teaspoons tahini
  • Pinch of sea salt
  • Pinch of black pepper
