I got so excited when I saw this recipe my heart may have actually stopped! Talk about a low-carb wonderland of flavors and textures to create this rich and creamy dish. I love using spaghetti squash instead of pasta, but the coolest part of this recipe is the cauliflower Alfredo sauce, which is amazing! I don’t care for bacon so used turkey bacon and a little olive oil for the sauce as indicated in the recipe. This is a delicious dinner, but could also be served for a chic healthy breakfast. Get your protein on and make this magnificent paleo meal.

Ingredients

  • For The Squash
  • 8 slices of bacon
  • 1 large spaghetti squash
  • salt and pepper
  • For The Cauliflower Sauce
  • 3 cups chicken broth
  • 3 cups water
  • 5 cups cauliflower florets cut into bit size pieces
  • 1 tablespoon reserved bacon fat or olive oil
  • 1/2 onion roughly chopped
  • 1 1/2 tablespoon minced garlic
  • 1/2 teaspoon salt
  • pepper to taste
  • For Serving
  • 1 large tomato diced
  • 1 large avocado cubed
  • 4-6 fried eggs depending on how many people you are serving
  • Diced green onion
