We love this gorgeous pink hummus made with beets! The combination of flavors are simply wonderful and the recipe is super easy to make.  Plus, the added health benefits from beets are amazing including: calcium, iron, fiber, potassium and more. You can even make a batch of beets ahead of time and just have them on hand for a super quick preparation.

Ingredients

  • 1 medium beetroot
  • 1/3 cup water
  • 2 cups chickpeas
  • 2 garlic cloves
  • 2 tablespoons tahini
  • Juice from 1 lemon
  • 1 teaspoon ground cumin
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
