Any recipe with roasted pumpkin is guaranteed to become one of my favorites! Besides being absolutely beautiful, this Roasted Pumpkin and Quinoa Salad is delicious! The roasted pumpkin, salted pepitas, and quinoa blend together for a hearty and healthy meal!
For the salad:
Roasted pumpkin (see below)
6 cups spinach
1 cup cooked quinoa
1/2 cup dried cranberries
2 oz. crumbled goat cheese (optional)
1/2 cup roasted pumpkin seeds (see below) or pepitas
