There is something truly special about this healthy one-pot Zuppa Toscana recipe. We’ve lightened up a copycat recipe of Olive Garden’s Zuppa Toscana (Italian for Tuscan Soup) packed with hearty potatoes, spicy sausage, spinach, bacon and a creamy broth making this decadent bowl of goodness a family favorite in no time.

Many of you are familiar with this restaurant favorite and there are several variations out there, but we have to say this one is our favorite. This healthy Zuppa Toscana is always a hit with friends and family alike.

This recipe can easily be made gluten-free by making sure that your Italian sausage is gluten-free as well as any other ingredients like chicken broth.

    Healthy Tweaks

    We’re swapping a few things in this recipe to lighten things up just a bit and make the soup a little less caloric.

    • Turkey bacon for regular bacon: by substituting turkey bacon, you’ll cut way back on the calories and fat, but it’s still so delicious. If you prefer regular bacon, of course, you can use that, however, turkey bacon is a nice option if you’re looking to make this soup healthier.
    • Half and half for heavy cream: this healthy swap cuts about 800 calories in total for this soup.
    • Low-sodium chicken broth (or even better bone broth!): this is such an easy swap to make. Cut the unnecessary sodium and even add extra nutrients with bone broth.

    Plus, it’s only 376 calories a serving and is quick and easy to make. Be sure to make enough for leftovers as you’ll want to bring this in your lunch all week long.

    How To Make This One-Pot Zuppa Toscana

    One of our favorite things about this recipe is that it’s made in one pot. This healthy one-pot Zuppa Toscana recipe is a perfect healthy recipe for weeknights. We love one-pot dinners and this one comes together quickly with less dishes to clean afterward! A dutch oven works beautifully for this soup.

    For this recipe, you’ll cook everything in one pot – score! Start with your bacon, then onion and sausage. You can also do these steps ahead of time and then refrigerate the meat until you’re ready to make the soup. Next add your broth and potatoes and simmer until potatoes are tender. Add kale, half and half, your seasonings and voila: a healthy one pot Zuppa Toscana that tastes just like the original but cuts out some extra calories and fat.

      Ingredients

      • 4 uncooked strips bacon, diced
      • 1 medium onion, diced
      • 1 pound mild (or hot) Italian sausage
      • 4 garlic cloves, minced
      • 32 ounces low sodium chicken broth (or bone broth)
      • 3 (1.5 pounds) russet potatoes, cubed (you can also use baby yellow potatoes, halved or quarted depending on size)
      • 4 cups curly kale, chopped
      • 1 1/2 cups half and half
      • Salt and pepper, to taste
      • Pinch of red pepper flakes
      • Optional: parmigiano reggiano for serving

      Directions

      1. Cook diced bacon in the bottom of a dutch oven or other stockpot. Remove to a paper towel lined plate.
      2. In the same bowl, add chopped onion and cook until translucent. Add sausage and break apart with a wooden spoon until no longer pink. Add garlic and sauté for 1 minute until fragrant.
      3. Add broth and potatoes. Bring to a boil and simmer for 15 minutes until potatoes are cooked.
      4. Add kale and cook for a few minutes until wilted.
      5. Add half and half and seasonings to taste.
      6. Serve in bowls with parmesan if desired.
