I love to make this pizza on days when I just want something light and fresh.  The feta gives this pizza a little bite and the raisins give it just a bit of natural sweetness.  It is perfect for socializing with your girlfriends on a summer evening.  This recipe suggests using a peeler to make zucchini ribbons, but if you have a spiralizer, you can make this recipe in a snap.  Just slide in the flat ribbon slicer and spiralize away! I use the Paderno Spiral Vegetable Slicer when I make my zoodles (zucchini noodles)!

Ingredients

  • 1 package whole wheat pizza dough
  • 1 small zucchini
  • 1/2 cup (or about 4 ounces) crumbled feta cheese or soft goat cheese
  • 1/3 cup Golden Raisins or Natural Raisins
  • 1 tablespoon olive oil
  • 1 large garlic clove minced
  • 1 teaspoon grated lemon zest
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon pine nuts
