Recipe: Sweet Potato Fries with Chipotle Sauce

These guilt free sweet potato baked fries are sweet and taste perfect with this spicy chipotle dipping sauce! A great alternative to the fries that are usually deep fried in oil so they’re high in fat and calories. Sweet potatoes are an excellent source of beta-carotene which helps protect our eyes, heart, and other organs. Rich in fiber and naturally sweet and delicious! Try this healthy sweet potato fries recipe for your next family dinner!

Ingredients

  • 3 sweet potatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • 8 ounces fat-free sour cream
  • 2 tablespoons Chipotle Chili's in Adobe Sauce - chopped into small pieces
  • 2 tablespoons Lime Juice
  • 1/4 cup fresh cilantro - chopped

Directions

  1. Preheat oven to 350 degrees
  2. Wash potatoes and cut in to long slices
  3. Place potatoes and olive oil in a large Ziploc bag. Shake to combine.
  4. Spread potatoes out onto a baking sheet sprinkle with salt
  5. Bake for 40 minutes, flipping over half thru the baking. Continue to cook until potatoes turn brown and crispy on the outside
  6. While the potatoes are baking, prepare the dipping sauce
  7. In a small bowl combing the sour cream, chipotle chilies, lime juice, cilantro and salt. Mix well and chill until ready to use
  8. Serve fries with dipping sauce.
