This Asian Beef Rainbow Salad is super easy to prepare, has tons of healthy, raw vegetables, and is packed with protein with the ground beef! Ingredients

  • For the Salad
  • 1 jalapeno pepper
  • 1 large yellow bell pepper
  • 2 green onions
  • 1/4 of purple cabbage
  • 1 pound lean ground beef
  • 3 tablespoons + 2 tablespoons coconut amino
  • 3 tablespoons pure maple syrup
  • 1 teaspoon crushed red pepper flake
  • 1 tablespoon Sriracha
  • 1 lemongrass stalk
  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic
  • 2 large carrots
  • For the Topping
  • Juice from 1 lime
  • 1 handful fresh cilantro
  • 1 avocado
