This Asian peanut slaw is simple and loaded with veggies. The recipe makes a perfect side dish or a summer salad but would also be great as a main course with roasted chicken or shrimp. The dressing has just the right amount of tang, too! Yum!

Ingredients

  • 3 cups of coleslaw mix
  • 1/3 red onion, sliced thin
  • 2 tbsp chopped roasted peanuts
  • 1 small jalapeno, diced
  • 2 stalks celery, diced
  • 1/4 medium jicama, diced
  • 3 scallions, diced
  • 2 tbsp low calorie peanut dressing
  • Juice of 1 lime
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
