Don’t let the green color scare you. This avocado mac and cheese recipe is a bowl of creamy goodness that outshines a box of Kraft any day! The avocado adds a dose of healthy fat while the sun-dried tomatoes add an extra pop of flavor. Your kids will be asking for seconds, and you can actually feel good about refilling their bowl.
Ingredients
- 14.5 oz whole grain macaroni noodles
- 2.5 avocados
- 5 basil leaves
- 4 cloves garlic
- juice from 1 lime
- 1/4 cup + 2 tablespoons chicken/vegetable stock
- 1/2 cup sun dried tomatoes, chopped
- 8 oz. mozzarella, diced into small squares
- salt and pepper to taste
- red pepper flakes, to taste
