Recipe: Butternut Squash Risotto

This healthy butternut squash risotto is rich, creamy, and has delicious fall flavors from the walnuts, parmesan, and hint of allspice! This meatless meal makes the perfect grain-free cold weather comfort food. We love this dish as a vegetarian entree, but it also makes an incredible side dish served with your holiday turkey or protein of your choice.



  • 1 tablespoon olive oil
  • 1 1/2 cups butternut squash cooked and chopped
  • 1/2 cup onion finely chopped
  • 1 cup Arborio rice
  • 1 cup Cambria Katherine's Vineyard Chardonnay (or whatever Chardonnay you have)
  • 4 cups chicken broth (or vegetarian broth)
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup shaved parmesan
  • 1/2 cup chopped walnuts
