Luckily, this version is low-carb, high-protein and is super veggie-friendly as it help fulfills your daily serving of veggies! If you’re anything like me, you’re always looking for new ways to incorporate raw veggies in your diet. Well behold, this crispy pizza crust recipe is made from cauliflower! Plus, the Greek yogurt pesto is filled with hunger-filling protein. Pizza night, anyone?


  • 12 cups cauliflower, cut into florets (about 2 medium heads or 3 pounds)
  • 1 tablespoon + 1 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1 teaspoon Italian seasoning
  • Pepper
  • 1 1/3 cup + 4 tablespoons parmesan cheese, grated and divided (about 3.5 ounces)
  • 2 large egg whites
  • Greek yogurt basil sauce
  • 1/2 cup plain, non-fat Greek yogurt
  • 1/2 cup firmly packed fresh basil, roughly chopped
  • 2 teaspoon garlic, minced
  • 1 tablespoon olive oil
  • Salt/pepper to taste
  • Toppings
  • 1 small zucchini, sliced
  • 3 Roma tomatoes, sliced 1/2 inch thick *
  • 1/2 tablespoon olive oil
  • 1/2 cup parmesan cheese, grated
  • Fresh basil, for garnish
