I tried this recipe for dinner and I was very happy with the result! Very filling and delicious and the carrots were a nice touch, however the combination of the reduced fat cheese and the carrots resulted in a different taste than what I'm used to when it comes to mac and cheese. I found that sneaking in some extra salt and pepper to my serving added some flavour.
