Recipe: Chili-Maple Roasted Butternut Squash & Brussels Sprouts

This recipe screams Christmas to me!  Maybe it’s the popping festive colors of red, white, and green among pomegranate seeds, brussels sprouts, and gorgonzola.  Regardless, this is totally on our Christmas feast menu.  The glaze on the veggies is the perfect balance of spicy and sweet, and they roast up to crispy edges with delicious smooth centers.  Easy to make too, which is ideal when you’re serving a full house of guests!

Ingredients

  • 1 pound of brussels sprouts
  • 4 cups cubed butternut squash
  • ½ tablespoon olive oil
  • 1 tablespoon pure maple syrup
  • 2 cloves garlic
  • 1/2 teaspoon chipotle chili powder
  • ¼ teaspoon cinnamon
  • Salt and pepper, to taste
  • 1/2 cup pomegranate seeds
  • 1/4 cup gorgonzola crumbles
