This healthy slow cooker chipotle pork tenderloin tacos with cranberries and apples will change your Taco Tuesday forever! This gluten-free recipe is a little sweet and a lot sassy! The apple noodles add a nice crunch and pair well with the cranberries for a festive flavor. This easy recipe takes 15 minutes to prep and the slow cooker does most of the work. This delicious dish is worthy of company, but tastes so good you may want it all for yourself.

Ingredients

  • For Pork
  • 1/2 tablespoon cinnamon
  • 3/4 teaspoon salt
  • 3/4 teaspoon ginger powder
  • 1/8 teaspoon clove powder
  • A pinch of black pepper
  • 1 pork tenderloin, just under 1 1/2 lbs
  • 1 cup no-sugar added apple juice
  • 2 cups cranberries (fresh or thawed frozen)
  • 2 tablespoons pure maple syrup Pure maple syrup
  • 1/2 tablespoon Adobo sauce from a can of chipotle peppers in adobo sauce.
  • Apple Noodles
  • 3 large Apples (I used fuji), spiralized with the 3mm blade.
  • 1 tablespoon pure maple syrup
  • 1/2 tablespoon cinnamon
  • For The Sauce
  • 1/4 cup plain, non-fat Greek yogurt
  • 1 tablespoon + 1 teaspoon pure maple syrup
  • White corn tortillas, for serving
  • Chopped green onion, for garnish
