Recipe: Double Chocolate Zucchini Muffins

I love when vegetables can taste like chocolate, don’t you?  This recipe sneaks in a serving of veggies, while maintaining the flavor of a decadent dessert!  The zucchini actually adds moisture to the muffins, making them extra delicious.  I made these for my boys and husband, and didn’t tell them they were healthy or used zucchinis.  You should’ve seen the look on their faces when I broke them the news.  “How can veggies taste this good?” my youngest son asked.  A great recipe for those of us with picky eaters!

  • 1 ¼ cup whole wheat pastry flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons coconut oil
  • 1/3 cup agave nectar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 egg white
  • 1 cup shredded zucchini
  • ¼ cup unsweetened applesauce
  • ½ cup Almond Breeze Unsweetened Almond Milk
  • ½ cup chocolate chips
