Recipe: Cilantro Lime Shrimp Bowls

We can’t get enough of lunch and dinner bowls! This one is made with fresh shrimp, brown rice, cabbage slaw and a homemade Greek yogurt dressing – don’t skip the dressing! Plus, the cilantro makes it so fresh and FULL of flavor. It’s a super healthy workday lunch or weeknight dinner with a serving of whole grains, lean protein, tons of veggies and healthy fat.


  • For the brown rice
  • 1 cup short grain brown rice
  • 2 cups water
  • For the slaw
  • 2 cups shredded carrots
  • 2 cups shredded purple cabbage
  • 1/4 cup rice vinegar
  • 2 tablespoons lime juice
  • 1/8 teaspoon salt (or more to taste)
  • 1 tablespoon maple syrup
  • For the Greek Yogurt Dressing
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon garlic powder
  • 2 tablespoons lime juice
  • Pinch of salt
  • For the Cilantro Lime Shrimp
  • 1 pound pre-cooked shrimp, tails-off
  • 1 teaspoon coconut oil
  • 1 tablespoon minced garlic
  • 2 tablespoons lime juice
  • Salt and pepper, to taste
  • 2 tablespoons chopped cilantro
  • 1 teaspoon cumin
