Recipe: Cilantro Lime Tilapia

With my kids growing up and moving in so many different directions these days, dinner often ends up just being me and my husband.  Sometimes, I miss the craziness of a full house, but I do love the simplicity of preparing a meal for two.  Much easier than cooking for a family of five!  My husband and I made this cilantro lime tilapia the other night, and fell in love with it!  It was so simple to prepare, but tasted like a gourmet meal.  We will be sure to keep this one on our radar for future dinners for two.

Ingredients

  • ½ cup uncooked quinoa
  • 1 cup water
  • 2 Tilapia fillets
  • Pinch of smoked paprika
  • ⅔ cup frozen corn kernels
  • 3 Tbsp lime juice
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ cup cilantro
  • Salt/pepper to taste
