Can you imagine anything that sound more refreshing than this cucumber mint smoothie?  I love cucumber mint mojitos, but those don’t exactly qualify as a healthy snack.  This smoothie is packed with fruits and veggies.  It is also vegan, dairy free, and fantastic.  It is a refreshing summer drink that is definitely going to become a staple for me.

Ingredients

  • 1 cup cucumber, peeled and seeded (English cucumber can stay whole)
  • 1 cup melon (cantaloupe or honeydew), chopped
  • 1 cup fresh spinach
  • 1 green apple, chopped
  • 5-10 mint leaves
  • 1 cup unsweetened almond milk
  • Ice
