Recipe: Flourless Pumpkin Blender Muffins

You guys!! We are loving these flourless pumpkin blender muffins. It is everything we can do to walk passed the pumpkin muffins in the bakery section of the grocery store right now, but with this healthier version, we don’t have to miss out! This simple vegan pumpkin muffin recipe is just 115 calories per muffin.

Just throw the ingredients in your blender and let it do all the work. Ready in 20 minutes, your entire kitchen will smell like pumpkin pie!

Ingredients

  • 1/2 cup pumpkin puree
  • 1 1/2 cups white beans (15 oz. can)
  • 1/4 cup pure maple syrup or honey
  • 2 teaspoons pure vanilla extract
  • 2 1/2 tablespoons sugar OR pinch stevia (or use 2 1/2 tablespoons additional maple syrup and decrease pumpkin by 2 1/2 tablespoons)
  • 1/2 cup rolled oats
  • 1/4 cup almond butter OR allergy-friendly alternative
  • 1/4 teaspoon salt
  • 1 3/4 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice or additional cinnamon
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon baking soda

They smell amazing but woke up to moldy muffins. - these need to be kept in the refrigerator. :(

These were wonderful... Very tasty. Great healthy recipe. The only change that I would make is to purée the beans first and then add to the rest. They didn't blend well in the blender with the rest of the ingredients. I would make again with the change.?????
