Recipe: Gluten-Free Carrot Cake Waffles

Carrot cake is one of my favorite desserts, so I flipped when I saw this gluten-free, vegan version! These waffles are fluffy, moist, and full of that sweet yet spicy carrot cake flavor. We used dairy-free coconut yogurt as a topping with a little shredded coconut and it was just delicious. You could even use whipped coconut milk as a topping if you want! Now, who’s ready to pair this with a mimosa for brunch?
Ingredients
- 2 flax eggs (2 tablespoons flax mixed with 6 teaspoons water)
- 1 1/2 cups buttermilk (almond milk mixed with 1 1/2 tablespoons lemon juice)
- 1 cup oat flour (ground oats)
- 1/2 cup buckwheat flour
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- 2 tablespoons coconut palm sugar
- 1 tablespoon baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon all-spice
- 1/2 cup apple sauce
- 1 teaspoon vanilla extract
- 1 1/2 cup grated carrots
- Optional: 1/4 cup raisins , 1/4 cup walnuts, chopped , 1/4 cup coconut flakes
- Cooking spray for waffle iron
- 1 cup plain Greek yogurt
- 1 tablespoon Maple syrup
- 1/4 teaspoon cinnamon
