I love a good veggie burger, and this healthy lentil mushroom veggie burger recipe has quickly become one of my favorite meatless meals. The lentil and mushrooms offer such a nice hearty texture to the veggie patty, and these veggie burgers have a lot of flavor unlike the store bought variety. Topped with a little arugula and goat cheese, these babies make for an amazing vegetarian meal for the whole family!

Ingredients

  • 1 cup dry lentils (I used green but red lentils work too)
  • 1 tablespoon olive oil
  • 1 cup finely chopped onion
  • 2 stalks of celery, finely chopped
  • 2 garlic cloves, minced
  • 4 cups of mixed mushrooms, chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • 1 1/2 teaspoons dried thyme
  • 1 egg or if vegan, make a flax egg (combine 1 tablespooon flax meal with 3 tablespoons water to make a flax egg)
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 teaspoon sea salt
  • Optional: 2 tablespoons sunflower seeds

This recipe is very tasty! It just fell apart a little bit...more egg next time, maybe?
