If you think all nachos are full of empty calories and fat, think again. These nachos are a light and fresh version of traditional nachos. They are full of healthy ingredients like quinoa, tomatoes, onions, cilantro, and corn and topped with goat cheese, which is creamy and decadent, but also pretty low in calories compared to other cheeses.  Plus, the quinoa salad is delicious on it’s own so feel free to add it to salads or eat it as a side dish if nachos aren’t your thing.

Ingredients

  • 1 cup cooked quinoa (~1/2 cup dry quinoa + 1 cup water )
  • 3 large tomatoes, diced
  • 1/3 red onion, finely diced
  • 1 can sweet yellow corn
  • 1/4 cup fresh cilantro, chopped
  • 1 t salt
  • 1/2 lime (juice)
  • optional: 2-3 tablespoons finely diced jalapeño
  • optional: 1 can black beans
