Healthy Whole Grain Carrot Coconut Morning Glory Muffins is a mouthful. But trust me, your mouth will be very happy after biting into one of these! The recipe calls for applesauce to reduce the amount of calorie-laden oil and to keep the muffins moist. Love that substitute!



  • 1 cup whole wheat pastry flour or white whole wheat flour
  • 1 cup all-purpose flour (or you can use whole wheat pastry flour/white whole wheat)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • pinch of nutmeg
  • 1/2 cup brown sugar, packed
  • 2 tsp vanilla extract
  • 2 tablespoons olive, coconut, or canola oil
  • 1 egg
  • 2 egg whites
  • 2 1/2 cups shredded carrots
  • 1/3 cup unsweetened almond milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup unsweetened shredded coconut (or you can use sweetened)
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts
