This gluten-free, low carb and paleo dinner is made with a simple Italian inspired spice blend and fresh tomatoes tossed with basil, balsamic vinegar, salt and pepper.


  • 24 ounces boneless skinless coho salmon filets (or other salmon)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon red pepper flakes
  • 2 tomatoes, chopped
  • 1/4 cup basil, chopped
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons olive oil
  • Salt and pepper
