  • 8 oz. uncooked high fiber pasta
  • 1 tbsp. olive oil
  • 2 garlic cloves, minced
  • 1 jar roasted red peppers, drained and sliced (7 oz.)
  • 1/2 lb. kale, chopped
  • 1 15 oz. can cannellini beans
  • 2 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1/4 tsp. pepper
  • 4 tbsp. Parmesan cheese
