These muffins are mouthwatering in every way.  They are lemony sweet with a touch of tartness, and filled with tons of warm, plump, juicy blueberries. These would be perfect for breakfast, or a midmorning snack.  They are even sweet enough to be considered a healthy dessert.  With all the decadent flavors in these muffins, you’ll find it hard to believe they are light!



  • 5 oz 1/3 less fat cream cheese
  • 3 T butter
  • 3 T unsweetened applesauce
  • 1 ½ c sugar
  • ½ t vanilla extract
  • 2 egg whites
  • 1 egg
  • 1 c all-purpose flour
  • 1 c white whole wheat flour
  • 1 t baking powder
  • ¼ t baking soda
  • ½ t salt
  • ½ c low-fat buttermilk
  • 3-4 T fresh lemon juice
  • 1-2 t lemon zest
  • 2 c blueberries
