Recipe: Low-Carb Pizza Stuffed Chicken Breasts

This low-carb pizza stuffed chicken breast breast recipe comes out tender, juicy, and full of Italian flavors. We used turkey pepperoni in this recipe because that’s what we had, and it was delicious! This recipe was frozen and thawed out when we cooked it and it came out perfectly! Great recipe to make ahead and thaw out for an easy meal with no fuss!


  • 2 1/2 pounds or 3 boneless, skinless chicken breasts, sliced in half lengthwise for thinner breasts
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 ounces pepperoni slices
  • 1 cup shredded mozzarella cheese
  • 2 cups marinara sauce of your choice or use the sauce ingredients below
  • (Quick Marinara Sauce Ingredients)
  • 1 tablespoon extra virgin olive oil
  • 3 cloves of garlic, minced
  • 2 (28 oz) cans of crushed tomatoes
  • 1 1/2 cup water
  • 2 teaspoons dried basil
  • 2 teaspoons dried fennel seed
  • 2 teaspoons dried parsley
  • 2 teaspoons salt
  • pepper to taste
  • red chili pepper flakes to taste
  • Optional: Top with fresh chopped basil and grated Parmesan cheese
