Recipe: Macadamia Crusted Mahi Mahi

We love a quick, tasty and healthy dinner. In fact, those are our absolute favorite meals to make. This mahi mahi recipe is exactly that. The mahi mahi is meaty, filling, high in protein and low in calories and fat – score! Oh and no “fishy” taste. But the real kicker in this recipe is the macadamia nut crust which makes for an awesome texture! Crunchy and just slightly sweet, the crust takes this fish to a whole new level. Plus the recipe is gluten-free, low carb and paleo.
- 1/4 cup macadamia nuts
- 1/2 tablespoon coconut oil, melted
- 2 fillets of mahi mahi
- Optional Garnish
