Recipe: Maple Dijon Baked Salmon Skewers with Herb Quinoa

Salmon is one of my favorite super foods!  It’s loaded with healthy omega-3’s that keep your brain sharp and your body healthy.  Plus it’s tasty!  I’m also obsessed with dijon mustard, so when I saw this dijon salmon recipe I had to try it, and let me tell you, it did not disappoint!  I loved the little brussels and the herbed quinoa too.  My husband and I both gave this two big thumbs up.  Plus it’s easy to prepare, and no mess when you bake on my favorite non-stick aluminum foil.

Ingredients

  • 1 - 1.5 lbs salmon
  • 1/3 cup dijon mustard
  • 2 Tbsp maple syrup
  • 1 Tbsp rice vinegar
  • salt and pepper to taste
  • 1 Tbsp EVOO
  • 3 - 4 cups brussels sprouts
  • 1 cup quinoa
  • 2 cups chicken stock
  • 1 tsp garlic powder
  • 1 tsp tuscan sunset
