Recipe: Mexican Quinoa and Sweet Potato Casserole

I’m a fan of anything that is just as easy as it is delicious.  To make this Mexican casserole, you literally throw everything into a baking dish, stir, and that’s basically it. Prep time is less than 10 minutes, which is ideal for me as a busy mom.  I like to put the chipotle yogurt sauce on the side, that way my vegan daughter can have it along with the rest of my family.



  • 1 cup quinoa
  • 1 cup vegetable broth
  • 2 cans black beans
  • 2 cans diced tomatoes
  • 1.5 cups salsa
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne
  • 2 large sweet potatoes
  • 1/2 cup Greek yogurt
  • 1 tsp chipotle powder
  • 2 tsp sriracha
