Recipe: Mexican Quinoa and Sweet Potato Casserole

recipe: Casseroles

I’m a fan of anything that is just as easy as it is delicious.  To make this Mexican casserole, you literally throw everything into a baking dish, stir, and that’s basically it. Prep time is less than 10 minutes, which is ideal for me as a busy mom.  I like to put the chipotle yogurt sauce on the side, that way my vegan daughter can have it along with the rest of my family.

Lisa - you can definitely add corn to this recipe to make it your own! I know other people have added corn and now I am tempted to try as well! Great thought!
