We love one-pan/pot meals around here. They’re typically super easy to cook and don’t require major cleanup at the end. This One-Pan Quinoa Taco Skillet Recipe is no exception. With healthier swap-ins such as quinoa for rice and lean ground turkey for ground beef, this taco skillet is seriously good. Add your favorite toppings (avocados for us, please!) and you’ve got yourself a great weeknight dinner the whole family will love.


  • 1 pound lean ground turkey
  • 1 cup quinoa, rinsed
  • 1 medium yellow onion, diced
  • 1 teaspoon olive oil
  • 2 bell peppers, diced
  • 4 cloves garlic, minced
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can diced tomatoes
  • 1 4-ounce can diced green chiles
  • 1 cup salsa
  • 1/4 cup cilantro, chopped
  • 2 cups fat free chicken stock
  • 2 teaspoons cumin
  • 1-2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
