You can’t get much easier than this healthy paleo casserole filled with lovely layers of turkey, peppers, zucchini and tomato. This gluten-free recipe is so simple and tasty you will make it time and time again. We highly recommend using fresh tarragon as indicated in this recipe, it makes a huge difference and offers an amazing flavor to this tasty dish.

Ingredients

  • Casserole
  • 1 tablespoon + 1 teaspoon olive oil, divided
  • 1 pound 93% lean ground turkey
  • 1/2 cup onion diced
  • 1/4 cup + 2 tablespoons tomato paste
  • A pinch of black pepper
  • 1 large zucchini, sliced 1/4 inch thick
  • 1 teaspoon garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin powder
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon oregano
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon fresh tarragon minced + additional for garnish
  • 1 large tomato thinly sliced
  • 1 orange bell pepper diced (about 1 large pepper)
  • Sauce
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon + 1 teaspoon almond meal
  • 1 tablespoon + 1 teaspoon coconut flour
  • 1 cup unsweetened almond milk
  • Salt and pepper to taste
