Recipe: Paleo Skillet Beef Fajitas

Looking for a healthy, 30-minute one pot dinner? Then this  Paleo Beef Fajita Skillet is just what you need. Seasoned and sautèed veggies plus seared flank steak make for a filling meal and great leftovers too. Plus, it’s gluten-free, dairy-free, paleo and whole30 friendly which means everyone in the family can enjoy it too!  If not on the paleo diet, you can serve with tortillas or rice!

  • Steak
  • 1 1/2 pounds flank steak, sliced into thin ribbons against the grain
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cayenne red pepper
  • 1/8 teaspoon cumin
  • 1/8 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • Vegetables
  • 2 tablespoons organic coconut oil
  • 1 yellow bell pepper, trimmed, de-seeded and sliced
  • 1 red bell pepper, trimmed, de-seeded and sliced
  • 1 garlic clove, minced
  • 5 ounces shitake mushrooms
  • 2 green onions, green part sliced
  • 1 cup vegetable broth
  • 1 jalapeño, seeded and thinly sliced {leave seeds if you like it HOT}
  • 1/4 cup chopped cilantro
  • 1 avocado, peeled, seeded and thinly sliced

    Hi Michelle - If you go to the ingredient list and at the top of the ingredient list you will find a green circle that says "Want to make this? CLICK HERE for the Recipe." You will want to click on that dark green round circle and it will take you to the page with the entire recipe and instructions on how to make. Hope this helps. Happy cooking!
