These easy-to-make cucumber rolls with turkey, cheese, pesto, spinach and veggies are super fun and super healthy. They make a great workday lunch or after-school snack that the kiddos can even help with! Simply slice a cucumber (or zucchini!) lengthwise on a mandoline and fill with whatever goodies you have on hand. This recipe is low-carb and can easily be made vegetarian.
3 medium cucumbers (each will yield about 6 slices)
1/4 cup store-bought basil pesto
6 slices Go Veggie Lactose and Soy Free Mozzarella Slices (or other cheese), cut into 1/2 inch strips
