Looking for a new way to incorporate pumpkin into a dessert?  Try these pumpkin cream cheese bars!  These bars look and taste like a gourmet dessert, but they are much healthier and take less than an hour to make including baking time.  Yes, they do use sugar. But, the rest of the ingredients are healthy and I live my life by the 80/20 rule.



  • 1 store bought, reduced fat, refrigerated pie crust
  • 1 15 oz. can pumpkin puree
  • 2 eggs
  • 1 12 oz. can skim evaporated milk
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1.5 tsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 2 oz. light cream cheese
  • 1 tablespoon powdered sugar
