Recipe: Pumpkin Mini Cheesecake

Those who know me best know pumpkin is my weakness.  Anything with pumpkin in it I’m almost guaranteed to love.  These mini pumpkin cheesecakes are no exception.  Not only are they super spooky and cute, but they are super delicious!  The cakes are gluten free, low fat, and also low calorie.  I’m definitely making a batch of these for my houseguests on Halloween.  You know what?  I bet they won’t even guess they are healthy!  That’s how delicious these babies are.

Ingredients

  • 6 Oz semi-sweet chocolate
  • 1 avocado
  • 1 Tbsp honey
  • 1/2 tsp vanilla extract
  • 1 egg
  • pinch of salt
  • ¼ Cup + 3 Tbsp truvia
  • 6 oz reduced-fat cream cheese
  • ½ Cup canned pumpkin puree
  • ½ Tbsp pumpkin pie spice
  • 1 large egg white
  • 1/2 tsp coconut oil
