Recipe: Pumpkin Pie Chia Seed Pudding

Have you tried chia seeds yet?  If not, this is a good recipe to start with.  Chia seeds are packed with fiber and healthy omega-3 fatty acids, which means that you’ll stay full all morning.  Want an extra punch of protein?  I like to top this chia seed pudding with some greek yogurt.  The extra protein keeps me energized throughout the day.  Plus, the greek yogurt adds a delicious creaminess to this already decadent breakfast.



  • 1/2 cup pumpkin puree
  • 1.5 tbsp. chia seeds
  • 3/4 cup light almond milk
  • Dash of vanilla extract
  • 1/2 or more tsp. pumpkin pie spice
  • 1 tbsp. maple syrup (or stevia to taste)
