Recipe: Pumpkin Pie Protein Bites

Anyone who knows me knows that pumpkin is one of my all time favorite foods; I’m OBSESSED! These protein bites taste like rolled up pumpkin pie filling, but each serving also has almost 7 grams of protein! They are totally vegan, gluten free, and super easy to make. The key is to not add extra pumpkin because you think they are too dry. Just food process a little longer. Then stick in the fridge to harden the dough a little. My kids love these, and they are made from carrots pumpkin, raisins, nuts and flax!

Ingredients
- 1 cup shredded carrot
- 1 cup almonds
- 1/2 cup raisins
- 1/2 cup pitted dates
- 1/4 cup walnuts
- 2 tablespoon canned pumpkin
- 1/4 cup ground flax seeds
- 1 1/4 teaspoon pumpkin pie spice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon agave
Directions
- Put all ingredients into a food processor and blend until smooth.
- Roll into 16 bite sized balls.
- Store in a Tupperware in the refrigerator for up to 1 week.

I'm confused. The video on this page for pumpkin protein bites is different than the written recipe. It seems to be two seperate recipes. One using protein power and the other using flax.

Hi Mary - Yes there is a slight difference in the video with using protein powder. We had made this video for something else using protein powder (showing people how to add a little extra protein in some treats) and it was close enough to the recipe that we put it on the same page. You can do either - just showing a few options!

they were a little bland, so I added a scoop of vanilla protein powder and dark chocolate chips.

Is there an easy substitute for the agave? I don't have any of that, but have absolutely everything else in my pantry to make these right now!

This sounds a little like the building blocks of LARAbars, which are my favorite. Have you ever made these in a Vitamix? If so, would I use the wet or dry blade?

I just made these and they don't taste like pumpkin much to me? Are the measurements above right? Is it 2 level Tbsps. of pumpkin?
