We all love pizza, and now you can enjoy healthy low-fat pizza with these tasty quinoa pizza muffins! We love this recipe because you can make it ahead of time and have meals for later in the week ready to go! These delicious quinoa pizza muffins make an excellent healthy snack, or serve on a bed of fresh greens for a tasty Italian meal.

Ingredients

  • 3 cups cooked quinoa (about 1 cup dry)
  • 1/2 cup finely chopped green pepper
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped nitrate free pepperoni (I use Applegate)
  • 1 1/2 cups shredded cheese (mozzarella or a pizza blend)
  • 4 lightly beaten eggs
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste (I prefer about 1/2 teaspoon each)
  • Pizza or marinara sauce for dipping

    Hi Hazel - So what you need to do is in the Green Box with ingredients there is a big circle in the top right hand circle that says "Want to make this recipe. CLICK HERE for the recipe." You will want to click that button for the full recipe and cooking instructions. To help you one step further the oven temperature is at 350 F for 30 minutes.
