Recipe: Quinoa Salad with Fruit and Coconut Lime Dressing

This quinoa salad is quick and easy, healthy, and loaded with fresh fruit! Plus, the quinoa packs some healthy carbs to keep you full until your next meal. You could eat the salad alone, but I think it would be excellent paired with a white fish!



  • 1 Cup Water
  • 1 Cup Light coconut milk
  • 1 Cup Uncooked quinoa
  • Pinch of salt
  • 2 Cups Sliced nectarines (about 4 small nectarines)
  • 2 Cups Sliced strawberries (about 12 large strawberries)
  • 2 Cups Chopped pineapple
  • 2-3 Tbsp Fresh mint, very finely sliced (to taste)
  • 1 Large Avocado, sliced
  • ½ Cup Reduced fat Feta cheese
  • For the Vinaigrette:
  • ¼ Cup Fresh lime juice
  • ¼ Cup Light coconut milk
  • ¼ Cup Honey
  • 1 Tbsp Olive oil
