A fun twist on your basic baked potato these roasted smashed garlic potatoes are simple and delicious! Potatoes are actually low in fat and calories so they make for a healthy side dish. These smashed garlic potatoes are seasoned and have a slight crunch from being roasted. We like these served with grilled meat or fish of any kind.

Ingredients

  • 1 1/2 pounds baby (small) potatoes, rinsed (can be yellow or red, I used a medley that also included purple)
  • 2 tablespoons olive oil
  • Coarsely ground sea salt, to taste
  • 1 teaspoon minced garlic
  • Dried parsley flakes (can substitute, thyme, rosemary or your favorite herb)

Yes, these are wonderful. I knew they would be. I used thyme and scallions, since I didn't have parsely. It was fun to squish the potatoes!
